Besan ke pude/pudla/dosa

Besan pudas or teekha pudla as we call it in Gujarati, is a quick and simple snack. We sometimes also make it for breakfast or in the evening when we are going for a light dinner. On days when you come home from a trip and the vegetable basket is empty or when you are too tired to cook anything elaborate, pudas are a convenient option.

Ingredients

  1. Besan – 1 big cup
  2. Rava – 2 teaspoons
  3. Kasoori methi – 1 tbsp (optional)
  4. Garlic – 3 cloves, crushed
  5. Red chilly powder
  6. Dhania powder
  7. Salt
  8. Asafoetida

Method of preparation:

Add rava and other ingredients to besan and make medium-thick batter (slightly watery than dosa). Kasoori methi is optional, the pudas taste good even without the methi. Keep aside for an hour. I am an impatient cook and I tried to skip that wait for 1 hour, but the pudas then dont turn out soft and porous. That 1 hour wait makes all the difference. Then pour the batter using a ladle and roll out thin pudas (like dosas) on a nonstick tava and add a few drops of oil if required. Pudas or pudlas can be served with tomato chutney/curd/pickle.

Kadhi is very easy. First of all make a thin buttermilk with high level of water and boil it in a gas for around 5 mins. Then, take a kadai, put 2 tablespoons of ghee, then put ‘kari pata’, ‘lal sukhi mirchi’, and some ‘hing’. Once the ghee melts put the buttermilk into it as if you are giving ‘Tadka of dal’. Later, put salt as per taste and very light ‘haldi’ and ‘mirchi’. Your Kadhi is taiyaar, goes great with plain rice or ‘Khichdi.
